The excitement was contagious in a room full of Who's Who of women in the Finger Lakes wine industry. NYWCC Wine Educators Tricia Renshaw and Cheryl Pitti kept the enthusiasm going as they shared their knowledge.<br />
Tricia Renshaw began with an in-depth look at wine - the chemical make-up, components and descriptors. Cheryl Pitti reviewed the six S's of wine tasting: sight, swirl, smell, sip, swallow/spit and savor. Who knew that our nostrils switch every 20 minutes or so, so we always have one that can smell better than the other? Or that womens' sense of smell is better than mens and that it is associated with our better memory? Next we practiced those skills on our first two wines: Chateau Frank Brut 2008 and Boundary Breaks 198 Riesling 2011. As we were swirling, smelling and savoring, Executive Chef Andrew from the NYWCC sent out the first food pairing, Green Beans with Pork Belly Lardons. We tried each wine with the pairing and took notes. I preferred the Chateau Frank Brut as I felt it brought out the brininess of the pork, but everyone has their own tastes (due to their unique tastebuds and memory as Tricia told us), so others preferred Boundary Breaks 198. There is no right answer- just personal preference!<br />

Parallele 45, Cote de Rhone 2014 from Southern France and Dr. Frank's Gruner Veltliner 2014 were paired with Basil Spaetzle with White Wine Butter Sauce (which was out of this world)! The Parallele 45 pairing magnified basil, cheese and nutmeg characteristics while the Gruner Veltliner emphasized basil/grassy characteristics much like a Sauvignon Blanc.<br />

Squash and Zucchini Pizza (made with Water Buffalo mozzarella) was paired with Billsboro Sauvignon Blanc 2014 and Castello Monaci Acante Fiano 2014 from Salentino Italy. The Sauvignon Blanc was really smooth and savory with the basil and cheese on the pizza, while the Acante Fiano illuminated the vegetable characteristics. The Acante Fiano was very different - kind of funky, but we were told it pairs wonderfully with seafood in southern Italy.<br />

Cherry characteristics were exemplified by the Rose, while the chardonnay, which spent three months in French oak barrels, gave a delightful mouth feel.<br />

Last night was the Glorious Garlic Festival Dinner - a celebration of the 25th Anniversary of Fox Run Vineyards. And what a celebration it was! The weather couldn't have been more cooperative - 70's and low humidity - blue sky, blue lake and after dark, the blue moon overhead! We gathered in a big white tent at the top of the vineyard.<br />

The all-locally-sourced menu featured glorious garlic delights by Chef Brud Holland. Winemaker Peter Bell paired each course with one of his outstanding wines from Hedonia to Port, Riesling to Rose! Accompanied with music by the fabulous Gap Mangione, it was the perfect evening!<br />

We had a little "bubbly" to get the celebration started. The 2011 Blanc de Blancs paired beautifully with various Finger Lakes artisan cheeses, house-made Riesling sausage, Verjooz pickled vegetables and of course, roasted garlic bulbs! Hedonia cocktails were also available.<br />

Garlic and onion Tartlets on Remembrance Farm arugula accompanied by Fox Run Riesling vinaigrette paired easily with the 2011 Reserve Riesling. This Riesling was sooo delicious - the quintessential Finger Lakes Riesling!<br />

Next the trifecta - Autumn Harvest beef tenderloin, strip loin and brisket with roasted garlic spread, a delightful cherry balsamic drizzle and Church Street produce "little creamer" potatoes paired with the 2012 Lemberger. Perfect portions and cooked to perfection (not easy when you are serving 140 or so people!<br />
Next was the delicate 2014 Rose of Pinot Noir with FLX Summer Caesar salad made with sunflower shoots, Reed Road Sweet corn, a creamy garlic dressing and garlic croutons.<br />
Honey Cured, Smoked Rainbow Trout was the next course paired with the 2012 Reserve Chardonnay from the Kaiser Vineyard and last but not least dessert including, but not limited to, roasted garlic ice cream!<br />

With the four walls closing in on us after this frigid, long winter, Jim and I decided to investigate some new-to-us wineries. Last Saturday<br />

we set out to do just that. We stopped by Keuka Lake Vineyards in Hammondsport, NY on the recommendation of Sebastien Leseurre from Domaine LeSeurre Winery.<br />
Keuka Lake Vineyards is located on the south west shore of Keuka Lake near Dr. Frank, Bully Hill and Heron Hill Vineyards. It is the old Taylor Wine Co. land now owned by Mel Goldman. The tasting room is actually the barn on the old Taylor vineyard land; the original Taylor homestead is right across the street. Mel came in as we were having a tasting with the extremely knowledgeable and personable Leandra Morris, Tasting Room Manager.<br />
We started the tasting with the 2012 Dry Riesling, Falling Man Vineyard, which earned 91 points in Wine Spectator! This complex Riesling has minerality, citrus and honey/flower characteristics. Definitely something special to try! The other Rieslings include the 2012 Estate Dry Riesling, the 2013 Evergreen Lek Dry Riesling and the 2013 Semi-Dry Riesling. Both Jim and I agree that our favorite was the Evergreen Lek with it's green apple and peach notes along with the citrus. It was enjoyable to have the opportunity to compare and discuss them with Leandra and Mel. Next we sampled the Vignoles. The Vignoles grape is a hybrid grape originating in France (comprised of either Pinot Noir or Chardonnay and a hybrid Seibel variety). The 2013 Amber Vignoles is what some refer to as an Orange Wine. This was a really fun, deceptive wine. The nose gave every indication that it would be somewhat sweet, but it hit the palate dry and spirit-like (scotch/whiskey). It changed and morphed on the palate- quite a shocker! The next tasting was the 2013 Gently Dry Vignoles, a much more traditional Vignoles and great summer-sipper with fruit and pineapple essences. The final Vignoles we tried was the 2011 Vignoles and Friends which is semi-sweet and lighter. (We bought one for our daughter who likes sweeter wines, as this comes across initially on the sweeter side, but the acidity lingers). <br />
On to the Reds! We enjoyed the KLV Red and the 2014 Leon Millot Nouveau. This is a first Nouveau for the vineyard. These grapes were harvested in September and spend little time in their stainless tanks before being released in November! Nicely fruit forward and smooth, this pleasant wine has its own cult following! Next we compared the 2012 and 2013 Cabernet Francs. Because of the difference in the growing seasons, these two vintages are very different, but delicious. Mel told us that it is about a 50/50 split on which people prefer: the deep color and robust spiciness of the 2012 or the lighter colored, complex 2013. We both actually liked the 2013, feeling that it is a slightly better compliment for different foods. Lastly, we sampled the 2013 Hammondsport, a blend of Pinot Noir and Leon Millot grapes in a delicious port-like wine.<br />
Mel asked us to do a blind sampling of a white wine to determine which Riesling it most resembled. (I believe there was confusion about <i>which</i> Riesling barrel it was pulled from). We thought it most reminded us of the Falling Man Vineyard Riesling due to the mineral notes. I wonder what it actually was!<br />
We were impressed by all the wines we sampled and we totally enjoyed the time spent with Leandra and Mel. Keuka Lake Vineyards is definitely on our return-to list so we can sample the chocolate and wine flight they also offer!<br />

We went to Fox Run Vineyards this past Saturday ( March 14 ) to attend the Burning of the Canes. This symbolic event (accompanied by a feast) ushers Spring into the vineyard. The canes that were pruned following the fall harvest are burned to celebrate the previous year's work and the upcoming year. With the mounds of snow from our historically below-average temperatures of February finally melting, bonfire pits to warm our outsides, and wonderful food by Chef Brud Holland to warm our insides, the event was just the right thing to chase away the winter blues. Great music by Rob and Gary accompanied the food as well as lots of Riesling -even hot mulled!<br />

Let me take a minute to describe the food Brud Holland prepared. There was the Wine Barrel Smoked Sausage that you could dunk in maple syrup or top with Brud's own outrageous mustards. Check out the photo of the unique wine barrel smoker! Accompaniments included pan-fried potatoes cooked on a special grilling table made by Sam Castner, homemade apple sauce, Potato Chowder with Lemburger Cheddar Croutons, marshmallows for roasting, hot chocolate, Mulled (Riesling) Wine, and Cayuga Creamery Salted Caramel and Marshmallow Ice Cream!<br />

Fox Run owner Scott Osborn tells us that because there were no freezing/thawing events during February, the snow cover acted as an insulator, therefore reducing any negative impact on the vines. Now if we can get through March and April without any temperature dips as the buds break, the vintage will be off to a good start.<br />

Winston wishes he could taste the Hedonia wine we sampled at Fox Run Vineyards during their 22nd Annual Glorious Garlic Festival (August 2, and 3) Either that or he is mad at us for not taking him! But if we had, we never would have made it to the wine tasting tent and had a sit down tasting with Peter Bell, Winemaker extraodinaire. We learned how the Chardonnay grape can produce two very different tasting wines. First we sampled the Un-oaked Chardonnay which is aged in stainless steel tanks. This produces a refreshing, crisp, light, fruit forward, dry wine that is very drinkable by itself on the deck or with food. Next we sampled the Reserve Chardonnay which is aged in French and American oak barrels to create that rich mouth feel and buttery, creamy wine that we love so much with seafood. Fox Run's Reserve Chardonnay is well balanced - no overpowering oak here. Peter tells us that it is the malolactic fermentation that the Oaked Chardonnay goes through that coverts the malice acid (think green apple tartness) to lactic acid ( fuller mouth feel and buttery notes). That explains why the Un-oaked has the tartness and crispness (and is the same reason a Riesling or Gewurztraminer is crisp, tart and fruit-forward) - no malolactic fermentation! </div>

Next we tried the Hedonia. This fortified wine occupies a unique niche. If you like Gewurztraminer, you will like this wine as it is made from the Traminette grape - relative of the Gewürztraminer grape. Peter feels the best way to drink it is before dinner (as an aperitif) to wake up your taste buds. And simpler is better - on the rocks with a twist of orange. Ways to mix it to create other cocktails are on the Fox Run website, but we really enjoyed sipping it alone and well chilled. At 20% alcohol and with 9% residual sugar, it is delicious, serious and needs to be experienced!</div>

What view from the deck at Red Newt Wine Cellars on July 5th where the 2012 Tierce was released! Tierce began as the cooperative efforts of three Finger Lakes winemakers: Peter Bell of Fox Run, Johannes Reinhardt of Anthony Road and Dave Whiting of Red Newt in 2005. The "Tierce Brothers" have grown to encompass six winemakers now (and some are women)! However the collaboration of the various winemakers from different locations on Seneca Lake is unique to wine regions of the world.<br />

Jim and I arrived as several other cars were pulling into the large parking lot behind the winery. It was a gorgeous July night: low humidity, a cloudless sky, and a refreshing breeze. The tasting room doors and windows were open allowing the light breeze to keep everyone comfortable. We were directed to begin the evening by sampling three favorite summer wines: Anthony Road's Pinot Gris, Fox Run's Rosé Lemberger and Red Newt's Gewurtztraminer. We took our first sample of the crisp, light Pinot Gris out on the deck to enjoy the scenery of the southeast side of Seneca Lake. We also were able to sample the perfectly chilledPinot Lemberger, which I absolutely love. We were just finishing the Gewurtztraminer with its lovely floral nose and lychee finish when we were called to the tasting room for the Tierce unveiling.</div>

Bob Madill introduced the featured speaker, Stewart Piggot. Piggot began by discussing his new book, <u>Best White Wines on Earth</u>, and told of the metamorphous of people's views of Riesling and how other parts of the world have caught on to to the merits of Riesling. Riesling is no longer associated with an over-the-top sweet wine, but can range from bone dry to a super sweet dessert wine. And the Finger Lakes shines in Riesling production. Next, the Tierce Brothers were introduced: Johannes Reinhardt, Peter Bell and Kelby Russell (from Red Newt). Each discussed the nuances of their dry rieslings that went into the Tierce blend. </div>

Jim and I were eager to try each ourselves, so when the speeches were over, we were poured a sample of each and we took them to the deck to taste. I don't have the best palate, so my impressions were: Fox Run's flavors hit immediately and were the brightest, Red Newt's flavors developed slowly and pleasantly and were strongest in the middle. Anthony Road's citrus flavors started strong, faded a bit in the middle and then came back to finish with lingering vanilla or almond. Jim felt Fox Run was the most flavorful and he enjoyed the balance of Anthony Road's as well. He felt Fox Run and Red Newt's wines had slight petrol notes. All were delightful and we wondered how they would be when blended.</div>

Finally the Tierce was revealed, and we were amazed at the synergistic effect the three dry Rieslings had on each other. I could taste Fox Run's initial flavor burst, Red Newt's citrus/mineral notes in the middle and Anthony Road's lingering vanilla notes at the end. Truly this wine showcased the best of the three components. </div>

As we finished our Tierce Dry Riesling, we asked Johannes Reinhardt about the possibility of another Tierce Red. He said that the quality of the vintage will decide whether the winemakers get together to make a red blend like they did in 2007. Who knows - 2010 was a really good year….<br />

Friday night Jim and I stopped by the Heron Hill Tasting Room located at their Ingle Vineyard site on Canandaigua Lake. I saw a sign outside saying they had wood fired pizza and a band on certain Friday nights and Saturday afternoons. Since this tasting room is exactly 10 minutes from our house, it seemed like a great idea to try out. We were not disappointed!</div>

There appeared to be a diverse group of people from across the United States attending by the looks of the license plates in the lot. I'm sure many were staying at Bristol Harbour right down the road. The band, Aaron Lipp and Gabe Schiffler, had just started playing when we arrived. Unfortunately, the pizza oven was a bit behind, so Jim and I went up to the tasting room to sample wines while we waited. We really enjoyed the Reserve Pinot Blanc 2012, the Ingle Vineyard Unoaked Chardonnay 2012 and the Reserve Gewurztriminer 2012 of the white wine selections. In the reds, the Classic Cabernet Franc 2010 (a great year for reds) and the Ingle Vineyard Cabernet Franc 2011 were very different, but both delicious. The Reserve Blaufrankisch 2011 was out of this world if you like Blaufrankisch (a.k.a Lemberger). Their Eclipse Red 2010 is a red blend of Cabernet Franc (60 something percent), Cabernet Sauvignon, and Merlot and aged 22 months in French, Eastern European and American Oak barrels. For $16.99 it is a sweet deal and remember it is a 2010 vintage! Their Eclipse White 2011 is also a very nice blend of Unoaked Chardonnay (60%), Pinot Blanc and Pinot Gris. It is a dry .05% RS and a bargain at $14.99. Nice for the deck on a hot afternoon or with dinner.</div>

We paired it with Italian sausage and pepper and onions. Usually Jim will pick out the wine, but he wanted a chance to try to figure out what was chosen, so I went to the wine cellar to make my pick. He guessed it was a Lemberger (Blaufrankisch) because of the black peppery finish, heavy blackberry/current notes and plenty of tannins. "It is almost woody" he said, wondering if it was crushed with the stems. Because of the peppery notes and acidity, it paired well with the sausage. 2010 was a banner year for Finger Lakes reds, so this would also age well ( oh well too late for that!)<br />
"Rover" Jon texted me saying he opened the Forge Riesling 2011 tonight. Here are his comments: "Nice and dry. Mineral flavor (definitely grapes from Seneca Lake). The flavor hits you then ends quick. Very refreshing."<br />
Which reminds me that this up coming weekend is the "Riesling Release Party" at the New York Wine and Culinary Center (www.nywcc.com). It will be held Friday night starting at 7:00 pm. Célene and Sébastien LeSeurre are the winemakers and owners of <a href="http://www.dlwinery.com/" target="_blank">Domaine LeSeurre</a>, located in Hammondsport, NY on Keuka Lake. Jon reports that the wines are good - "buttery-ish on the Rieslings". He said it is very slight, but a nice addition! </span></div>

There were several good wineries represented - Hermann J. Wiemer, Lamoreaux Landing, and a new one we wanted to try - Point of the Bluff Winery (Keuka Lake). It is always a fun time on the wine or beer walks because of the people you meet along the way and the new places you discover. Today we met a couple from Connecticut who moved to the area four years ago because their children are here. We had a great time comparing wineries we liked and I have a referral to their daughter's hair salon! We also discovered some new businesses in town that we will be sure to frequent. Some highlights were Point of the Bluff's Semi Dry Riesling, Lamoreaux Landing's 2009 Chardonnay and Knapp Winery's Vignoles ( a semi sweet white wine that our daughter will like and will also be a great summertime sipper if the ice ever melts off the lake). We discovered Good Life Tea Company on S. Main Street- specializing in awesome teas and we visited a favorite, F. Oliver's to purchase an infused EVOO.<br />
We returned home to our marinating (soy sauce, sherry, ground ginger, brown sugar and garlic) salmon. Dinner was grilled salmon, asparagus drizzled with F. Oliver's Garden Fresh Gremolata extra virgin olive oil (lemon, parsley and garlic), brown rice, salad and Hedonistic Chocolate's Dark Chocolate Orange Cranberry Bark for dessert. Forge Cellar 2011 Pinot Noir (smokey/complex) accompanied the salmon perfectly and was outstanding with the dark chocolate. So we continue to eat good food and drink good wines to stave off the cold weather that just keeps coming....<br />

strings of white lights… the long table decorated warmly with grapevines and candles…
the tantalizing aroma from the kitchen…. It was so good to be back at Fox Run
Vineyards for a winemaker’s dinner!<span style="mso-spacerun: yes;"> </span>Chef
Brud Holland created
a 5-course dinner to knock the socks off the Valentine’s Day guests.<span style="mso-spacerun: yes;"> </span>Winemaker Peter Bell paired the perfect Fox
Run wines with each course.<span style="mso-spacerun: yes;"> </span>This dinner
was exceptional!<o:p></o:p></div>

As we entered, we were greeted
warmly and given a glass of sparking wine by Scott and Ruth Osborn – the winery
owners.<span style="mso-spacerun: yes;"> </span>Locally made cheeses (<a href="http://murandacheese.com767-0019bb2963f4.html/" target="_blank"><b style="mso-bidi-font-weight: normal;">Muranda</b> Cheese Company</a>, Waterloo),
breads (<b style="mso-bidi-font-weight: normal;">Wide Awake Bakery</b>) and
sausage selections (<b style="mso-bidi-font-weight: normal;"><a href="http://www.autumnsharvestfarm.com/" target="_blank">Autumn’s Harvest</a></b>,
Romulus) filled the appetizer table. The 30 guests chatted, renewed
friendships, and claimed their places at the table.<span style="mso-spacerun: yes;"> </span><o:p></o:p></div>

We sat down and met our surrounding
dinner companions as the first course was served<b style="mso-bidi-font-weight: normal;"><i style="mso-bidi-font-style: normal;">: <a href="http://www.autumnsharvestfarm.com/" target="_blank">Autumn’s<span style="mso-spacerun: yes;"> </span>Harvest</a></i> </b>Cornish Game Hen and a
Biscuit with Riesling and Sweet Onion Gravy.<span style="mso-spacerun: yes;">
</span>The earthy, rich flavors of the game hen paired beautifully with the Fox Run 2010 Reserve Chardonnay.<span style="mso-spacerun: yes;"> </span>I might have
thought that Riesling would have been served as there was Riesling in the
gravy, but the Chardonnay was the perfect savory match.<span style="mso-spacerun: yes;"> </span>Peter spoke of<b style="mso-bidi-font-weight: normal;"> “umami”</b> in his wine description and it was clearly evident in this
pairing. (Check out <i style="mso-bidi-font-style: normal;">Umami –the “beautiful
taste,</i> Jon Rowley’s discussion of the meaning of umami at <a href="http://jonrowley.com/2010/09/02/umami/">http://jonrowley.com/2010/09/02/umami/</a>).<span style="mso-spacerun: yes;"> </span>This wine and this food pairing enabled both
to be the best that they could be! I could have stopped right there, but there
was so much more to come!<o:p></o:p></div>

Scallops with Freekah Risotto, Verjooz<i style="mso-bidi-font-style: normal;"> </i>glaze
and Micro Greens paired with the 2012 Gewurztriminer.<span style="mso-spacerun: yes;"> </span>Again a home run!<span style="mso-spacerun: yes;"> </span>The floral notes of the Gewurztriminer didn’t
give a hint as to how well it paired with the richness of the scallops, “risotto”,
and tangy <a href="http://verjooz.com/" target="_blank">Verjooz</a>.<span style="mso-spacerun: yes;"> </span>Verjooz is a product
created by Tina Hazlitt (<a href="http://hazlitt1852.com/" target="_blank">Hazlitt 1852 Vineyards</a>)
and the late Deb Whiting of <a href="http://rednewt.com/" target="_blank">Red NewtCellars</a> from half-ripe Cabernet Franc grapes.<span style="mso-spacerun: yes;"> </span>While “verjus” has been around since the
Middle Ages and is used world–wide, there are only a handful of producers of it
in the U.S. It can be used in recipes calling for <span style="mso-spacerun: yes;"> </span>gourmet vinegar, lemon or lime. When used as a
replacement, it becomes harmonious with the wine served due to it’s pH level. <span style="mso-spacerun: yes;"> While v</span>arious grapes can be used to make verjus,
Verjooz uses Cabernet Franc grapes because they are food friendly. This article
gives a great overview of<span style="mso-spacerun: yes;"> </span>Verjooz: <a href="http://www.fltimes.com/arts_and_entertainment/article_62115342-9abf-11e1-a767-0019bb2963f4.html" target="_blank">http://www.fltimes.com/arts_and_entertainment/article_62115342-9abf-11e1</a> The “Freekah” Risotto is made from Freekah, which Brud
Holland describes as “a green wheat which is harvested, sundried, toasted and
cracked to cook faster. It cooks up like
barley and is high in fiber.” He substituted it for the arborio rice used in risotto
– thus the name! Delicious and local.</div>

Duet of Tenderloin- Herbed Beef (with fresh thyme) and Pork Tenderloin (with dried

scrumptiously with the 2010 Cabernet Sauvignon. (a fantastic year for Finger
Lakes reds).<span style="mso-spacerun: yes;"> </span>I couldn’t decide which
herbed meat combination I liked better, they were both so delicious! I savored
each taste of the wine, the meats and the polenta.<o:p></o:p></div>

4:<span style="mso-spacerun: yes;"> </span>Finger Lakes Caesar Salad, which was
a wonderful marriage of <a href="http://www.fingerlakesfresh.com/" target="_blank">Finger Lakes Fresh Hydroponic Romaine</a> served over oven
roasted root vegetables with just the right amount of Caesar dressing and Muranda<b style="mso-bidi-font-weight: normal;"> </b>Asiago-Provolone cheeses.<span style="mso-spacerun: yes;"> </span>Now what would you pair with this? Riesling
maybe? Probably Pinot Noir wouldn’t be your first choice but with the root
vegetables to bring out the earthiness, the 2010 Pinot Noir was perfect.<span style="mso-spacerun: yes;"> </span><o:p></o:p></div>

<span style="mso-tab-count: 1;"> </span>OK by this
point I was ready to be rolled home – so much good food!<span style="mso-spacerun: yes;"> </span>But there was one more surprise to end the
evening: Trifle, Truffles and Tuiles!<span style="mso-spacerun: yes;">
</span>This was Chocolate Raspberry Trifle – Chocolate Cake, Raspberries Dark Chocolate
Truffles and Tuiles <span style="mso-spacerun: yes;"> </span>(Crisp Wafer cookies).<span style="mso-spacerun: yes;"> </span><span style="mso-spacerun: yes;"> </span>Throughout
the evening, Brud was assisted by Chef Christian Thirion, (described by Brud as
a “Renaissance man” who originally trained as a pastry chef in France) The
Tuiles was a successful joint effort of recipes, measurements and alliteration!
<span style="mso-spacerun: yes;"> </span>Such a decadent dessert combination was
made even more so when paired with Peter’s Fine Old Tawny Port.<span style="mso-spacerun: yes;"> </span>An absolute firework finish to a fabulous
meal.<o:p></o:p></div>

an evening! There was a wonderful sense of community throughout - from using
locally sourced ingredients to new friendships forged at the table.<span style="mso-spacerun: yes;"> </span>And isn’t that what great food and wine

to have such talented, creative artisans who share their gifts with each other

Last New Year's Eve we spent with Dave and Kathy at the <a href="http://www.brownhoundbistro.com/" target="_blank">Brown Hound Bistro</a> in South Bristol. The Brown Hound is quaint and intimate, with food that is out of this world! With their focus on local food and Finger Lakes wines, it was an excellent choice to ring out the old and celebrate the New Year. Throughout 2013, we enjoyed many dinners out and at our home. Of course all involved Finger Lakes wines (I wholly support NY Wine Spotting and ask for a Finger Lakes wine whenever we dine out).<br />

We have been living in the Finger Lakes region for just over a year now and loving it. There is so much to see and do, but it is hard juggling it with work and other duties. So I have a few random thoughts to share on the past year:<div>

*Ravines now owns 2 locations -- the former White Springs in Geneva which is a beautiful spot made more so by Morton's beautiful wines - as well as their original location on Keuka Lake.</div>

*Trish has left Fox Run and we are all waiting to see what great things she will be up to next. </div>

(Not to worry about Fox Run as Peter Bell and Sarah Gummoe are still producing award winning wines!)</div>
<div>
* Silver Thread opened on the East side of Seneca with some very lovely wines.</div>

*Another new winery to keep an eye on is Boundary Breaks. On their website claim they only do single vineyard, single clone rieslings because they want to do "one thing very, very well". And they do -try their 110, 198, 239, and Ovid Line North Rieslings. They are wonderful. Tricia, Peter and Kelby Russell from Fox Run (at the time) helped with the 2011 Rieslings and Ian Barry, winemaker from Villa Bellangelo will help with some of the 2012 vintages.</div>

I have been impressed over the past year also with the way wineries are using technology to promote themselves. Many of the wineries have improved their websites and are keeping them current. Many also have Facebook and Twitter accounts which keep us all current on releases and happenings. Wine dinners abound and are a great way to meet people with similar interests in wine and learn about the various vineyards and food pairings. The NY Wine and Culinary Center in Canandaigua also is hosting a great number of wine seminars not just with wines of the Finger Lakes but also wines of the Niagara Escarpment and downstate regions. </div>

Last random thought: I think I will have to get Jim to start a blog on NY State beer! There are so many craft breweries popping up that I think we will need to retrieve information on them also! We have enjoyed many including our nearby Naked Dove (their IPA is hands down the best!) Hmmm Finger Lakes Wine and Beer Retrievers? I don't think Maggie can handle it on her own. 1. Fox Run Blanc de Blancs. This was spectacular with the shrimp cocktail and was well received by the pack! A lovely, dry sparkling wine made with their Chardonnay grapes.</div>

2. Chardonnay: We served two because the first went so fast: Ravines 2008 Chardonnay and Fox Run's 2008 Reserve Chardonnay. This is a big Chardonnay crowd and both were enjoyed to the max!</div>
<div>
3. Red Newt Davis Vineyard 2009 Riesling. This is my absolute favorite riesling of all time. I savored every drop.</div>
<div>
4. Fox Run 2010 Rose. Dry, soft and smooth. I hope we have more to sip on a hot afternoon on the deck of the new house.</div>

5. Heart and Hands 2009 Pinot Noir. You just can't beat a Heart and Hands Pinot Noir.</div>

6. Ravines 2008 Meritage. Deeply colored and flavored. Stunning.</div>

7. Standing Stone Chardonnay Ice 2009, ending the evening on a sweet note. All honey and raisins and apricots.</div>

Into the ground to contaminate our produce and livestock?) will decimate the beautiful area of the Finger Lakes. Air pollution around the wells is another side effect. Thanks to former VP Cheney, hydrofracking for natural gas is exempt from the Safe Drinking Water Act's restrictions. What are we doing to our land and what legacy are we leaving for our children? I recommend watching<u> Gasland</u> to get more information about how fracking has impacted other areas of the country. Wake up people! It doesn't look likely the Monroe County will be affected and because it won't impact them directly, why not support it? I lived in Buffalo during the 1970's and early 80's. I drove past Love Canal frequently. Anyone who saw the boarded up houses and empty playgrounds or read the horrific stories of what Hooker Chemical's "safe" way of disposing their toxic waste did to the people in that neighborhood, would understand the impact on health and the environment big companies can have (all the while promising the safety of their procedures). The way the fracking companies have been sneaking in and buying land for cash all around the Finger Lakes is sly and devious, praying on the economic hardships we are facing. Studies completed in areas where hydrofracking has been done point to destruction, contamination and negative health affects. Wake up ALL of New York State! Do you want the beauty of the Finger Lakes decimated? Drinking water and land contaminated for future generations? Isn't it about time we stood up for our planet and protected the beauty and abundance we have? And does anyone honestly think that this will decrease our dependance on foreign energy supplies? We kept meaning to get to Shalestone Vineyards this summer, but because of circumstances way beyond our control, we just keep missing them. So yesterday I went to the McKenzie Child Sale and Festivities for Columbus Day and stopped at the "Bet the Farm" retail shop in Aurora. We tasted "Bet the Farm" wines: Pinot Grigio, Traminette, a white blend, Gamay Noir, Pinot Noir and Cab Franc. I liked what I tasted. They were all light, smooth, but also complex. The winemaker was actually trained by Lou Damiani and does her winemaking at Damiani. Anyway, I bought 2 Shalestones wines at the retail shop because I fear we won't make it there before it closes again this year. I bought the Pinot Noir and Cab Franc. Tonight we opened the Shalestone Pinot Noir. It is full of cherries, nutmeg and coffee with a long finish. Jim, however felt it tasted more like a Cab Franc with green pepper tones. I agreed that the tannins were evident half way through, but then I got cherries again. He disagreed (as we do often these days) and went downstairs to get our benchmark of pinot noirs, Heart and Hands, to compare. </div><div><span class="Apple-tab-span" style="white-space:pre"> </span>Heart and Hands is like eating a golden delicious apple: smooth, round, full and lush. It gives you that warm fuzzy feeling. The Shalestone is cherry and more fruit forward. I like them both and we are having a discussion about the fairness of comparing them. I think they are both good, though different. Jim prefers Heart and Hands. " That's the way it is" at our house tonight. The main course was baked almond crusted sea bass topped with apricot relish and apricot verjus glaze served with a garlic scape potato pancake with green beans. This was paired nicely with Lamoreaux Landing 2006 Blanc de Blanc. The dessert was Chocolate Pate with Black Tea and Cardamom Ice Cream paired with Red Newt Cellars 2007 Hellbender Soiree. The food was out of this world and the pairings superb. Often winemakers will hold back some of their wines for their wine "library". The library wines can then be accessed for special events such as the Vertical Tasting on Sunday at Heart & Hands Wine Company. At a vertical, you are able to compare different vintages side by side. The Heart & Hand's vertical of their Brut Rose included the 2007, 2008, and 2009 vintages. Winemaker Tom Higgins had tasting notes available with information about the vintage season, which Pinot Noir clones were used and his tasting notes from when each was opened Sunday morning. He paired the Roses with Strawberry shortcake (and whip cream - yum) which really brought out the berry flavors in the sparkling wine. </div><div>Before I tell you about each vintage, I think a short course in Champagne and Sparkling Wines is in order. For a wine to be called Champagne, it must be made from either Chardonnay, Pinot Noir or Pinot Meunier grapes grown in the Champagne region of France. Since Heart & Hands is in Union Springs NY, they must call their wine Sparkling Wine. HOWEVER, Tom uses the Champagne METHOD (or Traditional method) to make his Sparkling Wine. The Champagne Method is labor intensive, takes longer and is more expensive than other methods used. In the Champagne Method, the final blend of the still wine is bottled with a small amount of wine, sugar and yeast. A secondary fermentation occurs in the bottle which can last up to 3 months (to get those bubbles). Then the bottles are stacked with their necks pointing down and are turned at regular time intervals. In the degorgement stage, the bottle necks are plunged into a freezing solution which freezes the bottle around the sediment (which has traveled to the neck). The bottle is turned upright, the cap popped, and ice and sediment shoot out. Lastly, the bottle is topped with a reserve wine and sugar combo, re-corked and further aged. Using the Champagne Method generally produces a higher quality sparkling wine, and Tom is all about quality. </div><div>So - the 3 vintages:</div><div>2007: A hot and dry vintage. Dijon Pinot Noir Clones were used. This is important as these clones are from Burgundy and used to make still wines (such as Pinot Noir). The wine was a slightly darker shade of pink than the other two due (according to Tom) to thicker skins on the grapes. This sparkling wine was described by Tom :" Raspberry opens up on the nose leading to ruby red grapefruit, cranberry-raspberry-orange muffin". It was really really good with the strawberry shortcake!</div><div>2008: This was a normal vintage. The Pinot Noir clones were Champagne clones (from the Champagne region of France). Tom described it as "Plum skin and delicate floral notes open up to grapefruit and freshly mowed straw supported by a firm backbone." </div><div>2009: This vintage was cool and moist. Again Champagne clones were used. Tom's description:" Hints of candied cherries enter the nose followed by a ripe cherry burst on the palate with a touch of dried cranberry tartness on the finish." </div><div>All were really good and while there were commonalities among them, each had subtle differences that distinguished them depending on the taster's palate! Needless to say,we purchased the 2009, which is currently in the tasting room. But get some soon, because it won't last long. </div><div>New releases also available in the tasting room now are the 2010 Dry Riesling (108 cases produced) and the 2010 Riesling (226 cases produced). Other wines available for tasting are the 2009 Pinot Noir and the 2008 Barrel Reserve Pinot Noir (which is out-of-this-world). </div><div> </div><div>P.S. The tents were set up with the Chili-meisters stirring and cooking like mad. There was the "Cheese-head Chili" man (yes, Packers fans, he does have the Cheese-head hat!). There was Gary's Hot Highland Drunkin Cow Chili, Chicken Wing Chili, Jamaican Me Crazy Chili, Dr. DD's Chili or Dr. DD's wife's Chili....all were very good and I was glad I wasn't judging. (I was told to stay clear of the cheeky red-head with the British accent as she might try to sway the votes toward the Drunkin Cow Chili)! Jim was chosen to judge, so "PHEW" to me! </div><div>There were the busloads, the limo's and the hard core chili tasters. The tasting room buzzed with people, then rumbled with people - wait- that wasn't the last tour bus, that was thunder! You could see the dark clouds and rain crossing the lake...headed right towards us! The wind hit! The tents and chili flew and the rain came down sideways and in torrential quantities. In came the soaking wet Chili chefs. Fortunately the judges had had enough time to make their decision. So when the thunder clapped, the lightening struck and the electricity went out, all was serene on the porch of Standing Stone as the awards were given out to the best Chili on the East side of Seneca. I believe Chili #6 won - Dr DD's wife(?), but I'm not sure as I was busy chatting, and pouring. All I know was when all the left over chili was mixed together and we had a moment to try some, the conglomeration was great! What wine would you have with chili you might ask? Well, it depended on the chili: hot and spicy - maybe Gewurztraminer or Smokehouse Red, sweeter - maybe the semi-dry Vidal. Whatever your preference, it was a fun day to taste and experiment with pairings. (And yes, after about 4 hours, the electricity did come back on)! </div><div>P.S. The murals show scenes of the village and were originally hung in the front hall of the Inn. Shaw's murals were joined by four new panels of other Aurora scenes painted by local artists with the newest being the Wells College Boathouse painted by local artist Derwood Crocker. They were stunning.</div><div> We sat at our table and met new friends Terry and John, and Vicki and George. The meal began with Red Endive, Fennel and Frisee Salad topped with pistachios and ruby red grapefruit vinaigrette perfectly paired with the 2010 Dry Riesling. With each course, Tom gave information about the wine being served. Next came Coriander Crusted Scallops drizzled with carrot ginger puree and served on kohlrabi slaw paired with 2009 Polarity, another library wine. The Polarity, a chardonnay-like wine made with Pinot Noir grapes, was awesome. Tom tells us that more Polarity is in the future of Heart and Hands. The entree of grilled lamb chops on warm berry pilaf with spring vegetables, watercress and natural jus was served with a flight of Pinot Noir (2007 Barrel Reserve, 2008 Pinot Noir from the Sawmill Vineyard, and the 2008 Pinot from the Hobbit Hollow Vineyard). I loved the idea of the flight so that each wine could be tasted, appreciated and compared to the others. (And I also loved the lamb!) This encompassed several vertical tastings paired with phenomenal food. At the end, we got to mix our own Meritage blend! But let's start at the beginning.</div><div>Finger Lakes Wine Retriever's friends and "Rovers", Maggie and Jon arrived at Ravines before we did, but saved us a couple glasses which were immediately filled with Keuka Village! We chatted outside until the preparations were all ready for us inside. Then we entered the tasting room to find tables set and wine ready to be poured. Winemaker extraordinaire, Morten Hallgren took his place behind the bar as we took our places at the table. Then the food pairings and wine tasting began! We knew the wines would be delicious, but we never expected the extensive food pairings which accompanied them. Still more unbelievable was that the kitchen equipment in the new kitchen area below the tasting room was not yet hooked up, so Lisa Hallgren made to make do (and did so exceptionally), with toaster ovens! We were able to taste the 09 Riesling that was awarded 90 points by the Wine Spectator, Merlot, Pinot Noir, some 2010's from the barrels and compare them to earlier vintages. Paired with quiche, salad, chocolates, and I wish I could remember what else, it was a meal, an education and beyond our wildest expectations. Everyone enjoyed sharing, talking and meeting each other and Morten enjoyed it all!
